Founded in 2023 by President Mika Hosaka, and working under the basic philosophy that “food as the foundation of everything,” Le Chef offers an executive chef and entertainment experience like no other. Since its foundation, Le Chef has provided an experienced award-winning chef to prepare a variety of sushi delights right in your home or office. The company is extremely flexible and offers comprehensive consultation leading up to your event in order to ensure that both host and guests have their fill of delicious food and pleasant conversation in Japanese, English or a combination of both. They offer a catering service for sushi. They can also provide sushi with Italian and French appetizers or Italian and French catering.
The chef
Chef Jimbo was born in Tokyo and had an early and successful career in the publishing and music production industries. In 2001, Jimbo struck out for the West Coast of the United States, where he began working as a manager of a sushi restaurant in Venice Beach, later taking on more duties at a sushi eatery in Hermosa Beach. Not one to remain idle, Jimbo expanded his career to teach Japanese cuisine at the California Sushi Academy and began offering a complete Sushi Bar style catering service in California, Chicago, Las Vegas, Cincinnati and other places.
While in the United States, Jimbo undertook personalized menu planning and catering for a variety of occasions, including home parties, sporting events, office parties, weddings, business meetings and Hollywood events. Some of his successful and most-memorable Hollywood events included parties for the Directors Guild of America, Grammy Awards and Academy Awards. He has also catered to movie and television premier events, as well as private parties for some of Tinsel Town’s biggest movers and shakers.
While perfecting his culinary skills, Jimbo also worked hard at creating a convivial atmosphere using the proximity to customers that sushi chefs enjoy to hone his conversational skills, telling stories and trading jokes with diners at his events.
Chef Yoshiki Takahashi is in charge for French and Italian dishes. He was interested in cooking from an early age, and was delighted when people said the food he made was “delicious,” so he aspired to become a chef. After graduating from the Miyagi Prefectural Culinary School, he worked in the French kitchen of a members-only hotel in Karuizawa. He then gained experience in grand maisons, innovative French restaurants, wine bars and other places in Tokyo. He opened “Caprys bistro & bar” in 2021.


The service
Le Chef will send their chef to your home with the very best in seasonal fish selected and purchased by the chef directly from the Toyosu Fish Market. Upon arriving at your home, the chef will serve a couple of North American-style sushi rolls, such as California rolls, Wagyu rolls or Philadelphia rolls. Next comes eight pieces of Edo-mae style nigiri sushi using a variety seafood items, such as chutoro (slightly fatty tuna), otoro (fatty tuna), snapper, bonito and other fish. Through consultation with the chef, the menu can be tailored to include high-grade items to suit any taste. If a customer wants only the best otoro, crab and sea urchin, Le Chef can accommodate their desires.
In addition to catering a meal, Jimbo is also available to conduct cooking classes in English to teach people the skills and techniques of sushi. If you are looking for some education along with a delicious meal, Jimbo can also provide a lecture on cooking while cooking for guests.
With about a week’s notice, Le Chef can prepare a night of sushi and conversation for a minimum of 10 guests right in your home. Larger parties, including corporate events for up to 100 people, require a bit more time, but Le Chef is flexible and will work to accommodate your needs as best as they can. Prices for their Superior Course start at ¥14,000 per person, while the Le Chef Course (¥20,000~) is ideal for executives and out-of-town guests. In addition to the ingredients found on the Superior Course, the Le Chef course adds such delicacies as sea urchin, salmon roe and more.
The chef will also provide a top-end junmai daiginjo (the highest quality) sake that has been specially selected to pair perfectly with the meal. In addition to preparing high-quality and delicious food, Le Chef, through consultation with the client, is happy to offer a unique cocktail (or mocktail) created just for your occasion. They can also consult on sake or wines to best complement the food being served.
