SMAAK opens in December 2022 in Bashamichi, Yokohama! Produced by Michelin chef Jacob from the Netherlands, the first store in Asia!

SMAAK is the first restaurant in Asia produced by Jacob Jan Boerma, a three-star Michelin chef straight from the Netherlands, the country of gastronomy. On December 15, 2022, the grand opening was held on the 46th floor of Yokohama Kitanaka Knot in Bashamichi, Yokohama, on the observation floor.

Chef Jacob Jan was born in Austria in 1972. He has been interested in cooking since childhood, attended a hotel school known for gastronomy in the Netherlands, and after graduating, learned the latest and greatest cooking techniques at Michelin-star restaurants around the world. Upon his return to the Netherlands, he became a chef at a young age. In the summer of 2002, he opened De Leest with his partner, sommelier Kim Veldman. In just six months it was awarded one Michelin star, two stars in 2007, and in 2013 it became the fourth three-star restaurant in the Netherlands. Today, he produces popular restaurants such as the White Room in Amsterdam and Restaurant Fine Fleur in Antwerp, and is active around the world

 

Chef Jacob, who has a reputation for focusing on the quality of ingredients and bringing out the best in them, has been fascinated by Japanese produce ever since his first visit to the country. It was a natural choice to open his first store in Asia, in Japan. A country with four seasons, blessed with mountains, surrounded by the sea and boasts an abundance of food.

At SMAAK, while gazing out at the night view of Yokohama Bayside, a special course and wine pairing will be served. It’s like a work of art, intricately intertwined with the “sourness” and “umami” that Chef Jacob specializes in, all ingeniously woven together with Japanese sourced ingredients.

Choose alcoholic or non-alcoholic pairings to match with your food. Alcohol is mainly wine, and non-alcoholic drinks are offered such as carefully selected tea and homemade infusion.
